Chocolate Chip Coconut

Banana Bread Muffins

*Makes 12 Muffins*3 Ripe Bananas
3 large eggs
1/4 cup coconut oil (softened)
1/2 cup coconut flour
1 tsp baking soda
1/4 cup maple syrup
1/2 tsp vanilla extract
1/2 tsp ceylon cinnamon
1/4 tsp real salt
2 tbsp hemp seeds
1/4 cup Lily's Sugar-Free Baking Chips


1  Preheat oven to 350 degrees F
2.  Line muffin pan with baking cups and set aside
3.  In a large bowl, mash bananas until smooth.  Add eggs and whisk well until smooth
4.  Add coconut oil and maple syrup and whisk again until combined
5.  Add coconut flour, baking soda, cinnamon, vanilla and salt.  Whisk until combined
6.  Sprinkle and fold in hemp seeds and chocolate chips 
7.  Spoon batter evenly into muffin tins.  Bake for 20-25 minutes or until a toothpick comes out clean
