We chose to add freeze dried strawberries for their delicious taste but also because of their function:
Strawberries are an excellent natural source of vitamin C, which is essential for the biosynthesis of collagen, the most abundant protein in the body. Collagen provides structural support to the skin, bones, tendons, and ligaments.
Vitamin C acts as a cofactor for prolyl and lysyl hydroxylase, enzymes that stabilize and cross-link the collagen molecules. Without sufficient vitamin C, collagen synthesis is impaired, leading to weakened connective tissues—hence why scurvy, a disease caused by vitamin C deficiency, leads to fragile skin and gums.
Studies show that consuming both vitamin C and collagen together increases collagen density in the dermis, improves skin hydration and elasticity, and can even reduce the appearance of fine lines and wrinkles.
Strawberries also contain antioxidants like ellagic acid and flavonoids, which help neutralize free radicals that degrade collagen and accelerate skin aging.
